Ingredients
  

  • 1 box 8.5 oz Jiffy Corn Muffin Mix
  • 1 large egg
  • cup milk or buttermilk for tangy flavor
  • 2 tbsp melted butter optional, richer taste
  • Nonstick spray or oil for greasing pan

Instructions
 

  • Mix the Batter – In a bowl, whisk egg + milk, then stir in Jiffy mix until just combined. Fold in melted butter if using. (A few lumps are fine—keeps it tender!)
  • Prepare Pan – Grease your air fryer-safe pan or muffin cups, then pour in the batter. Spread evenly but don’t fill more than halfway.
  • Air Fry – Place pan in air fryer basket. Cook at 330°F (165°C) for 15–20 minutes until your kitchen smells amazing.
  • Check Doneness – Insert a toothpick in the center—if it comes out clean, you’re good to go! If not, cook 2–3 minutes more.
