Ingredients
  

  • 2 lb lamb rack Frenched
  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tsp freshly ground black pepper
  • 3 garlic cloves crushed
  • 1 tsp rosemary fresh or dried
  • 1 tsp thyme fresh or dried
  • Optional Toppings & Garnishes:
  • Maldon flaky sea salt
  • Chimichurri or mint sauce
  • Lemon zest

Instructions
 

  • Bring Lamb to Room Temperature: Let the lamb rest outside for 20 minutes. Pat it dry with paper towels.
  • Preheat Air Fryer: Set your air fryer to 400°F (200°C) and preheat for 5 minutes.
  • Season the Lamb: Massage with olive oil, then season generously with garlic, herbs, salt, and pepper.Massage the seasoning into the meat.

  • Cook in Air Fryer: Place lamb bone-side down in the basket.

  • Cook in the air fryer at 380°F (193°C) for 15 minutes, flipping halfway to ensure even cooking.
  • Use a meat thermometer to check doneness:
  • Rare: 120°F / 49°C — Cool red center, very soft texture
  • Medium-Rare: 130°F / 54°C — Warm red center with a tender, juicy texture
  • Medium: 135°F / 57°C — pink center, slightly firm
  • Well Done: 150°F+ / 65°C+ — Fully cooked throughout, no pink, with a firm and drier texture.
  • Rest the Lamb: Cover with foil and let rest for 5–10 minutes before slicing.
