Chopping board + knife
- 2 lbs 900g floury potatoes (e.g., Maris Piper, King Edward)
- 3 tablespoons of duck fat divided (2 tablespoons for tossing, 1 tablespoon for air frying)
- 1 tsp coarse salt for boiling
- 1 tsp flaky sea salt for seasoning
- Optional: fresh rosemary, garlic, or Parmesan for flavor boost
Peel & Chop Potatoes: Peel the potatoes and cut them into chunks roughly the size of a golf ball. Soak in cold water to remove starch.
Parboil: In a saucepan, add potatoes, cover with salted water, and boil for 10–12 minutes until just fork-tender. Drain and let them steam dry.
Toss in Duck Fat: Add 2 tbsp melted duck fat and sea salt. Shake gently to roughen edges — this creates extra crispiness!
First Air Frying Stage: Preheat air fryer to 390°F (200°C). Place potatoes in a single layer and cook for 15 minutes.
Toss Again Midway: Take out the basket, toss the potatoes with the remaining 1 tablespoon of duck fat, then place them back into the air fryer.
Final Air Frying: Air fry for an additional 10 minutes or until golden brown and crispy.
Serve: Garnish with herbs or Parmesan. Serve immediately while hot and crispy!
💡 Notes & Tips
- ✔️ Use floury potatoes for the crispiest results.
- ✔️ Don’t skip parboiling – it’s key to that soft interior and crunchy exterior.
- ✔️ Shake midway and don’t overcrowd the basket.
- ✔️ If using frozen pre-cooked potatoes, add 5–7 minutes to the cook time.
🍽 Serving Ideas
- Perfect with roast chicken, beef, or turkey
- Serve alongside garlic butter steak or grilled veggies
- Great as a party appetizer with herby mayo or aioli
- Sprinkle grated Parmesan and rosemary over the potatoes for a flavorful gourmet touch.
❄️ Storage & Reheating
- Fridge: Store in an airtight container for 3–4 days
- Freezer Tip: Freeze the potatoes in a single layer first, then transfer to a bag and store for up to 1 month.
- Reheat: Air fry leftovers at 375°F (190°C) for 5–7 minutes (fresh), or 20–25 minutes (frozen), tossing halfway
