Ingredients
  

  • 2 lbs 900g floury potatoes (e.g., Maris Piper, King Edward)
  • 3 tablespoons of duck fat divided (2 tablespoons for tossing, 1 tablespoon for air frying)
  • 1 tsp coarse salt for boiling
  • 1 tsp flaky sea salt for seasoning
  • Optional: fresh rosemary, garlic, or Parmesan for flavor boost

Instructions
 

  • Peel & Chop Potatoes: Peel the potatoes and cut them into chunks roughly the size of a golf ball. Soak in cold water to remove starch.

  • Parboil: In a saucepan, add potatoes, cover with salted water, and boil for 10–12 minutes until just fork-tender. Drain and let them steam dry.

  • Toss in Duck Fat: Add 2 tbsp melted duck fat and sea salt. Shake gently to roughen edges — this creates extra crispiness!

  • First Air Frying Stage: Preheat air fryer to 390°F (200°C). Place potatoes in a single layer and cook for 15 minutes.

  • Toss Again Midway: Take out the basket, toss the potatoes with the remaining 1 tablespoon of duck fat, then place them back into the air fryer.

  • Final Air Frying: Air fry for an additional 10 minutes or until golden brown and crispy.
  • Serve: Garnish with herbs or Parmesan. Serve immediately while hot and crispy!
