Ingredients
  

  • For the Roast:
  • 3 lb chuck roast room temperature
  • 1 tbsp olive oil or avocado/vegetable oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Vegetables:
  • 1 lb potatoes quartered
  • 1 lb carrots chopped
  • 1 medium onion quartered
  • Optional Substitutions:
  • Smaller roast 2 lb: reduce cooking time 5–7 minutes
  • Larger roast 4 lb: increase cooking time 8–10 minutes, cook veggies separately
  • Seasoning alternatives: Montreal steak seasoning herbs de Provence, Southwest spice blend
  • Veggie swaps: Brussels sprouts parsnips, or sweet potatoes

Instructions
 

  • Phase 1 – The Sear (400°F, 15 min)
  • Preheat the air fryer to 400°F for 5 minutes.
  • Lightly grease the basket with oil.
  • Place seasoned roast on rack; hear the sizzle!
  • Cook for 15 minutes without opening.

  • Phase 2 – Cook with Vegetables (325°F, 20–25 min)
  • Flip roast with tongs.
  • Add potatoes, carrots, and onions around roast.
  • Lower temp to 325°F and cook for 20–25 minutes.
  • Check roast internal temp: 125–130°F for medium-rare, 135–140°F for medium, 145°F+ for well-done.
  • Check the vegetables with a fork and cook for a few extra minutes if necessary.

  • Phase 3 – Resting (30 min)
  • Take the roast out, place it on a cutting board, and loosely cover it with foil.
  • Rest for 30 minutes to allow juices to redistribute.
  • Optional: pop veggies back in the air fryer if not fully tender.
